We made a roadtrip yesterday. What a beautiful drive through the mountains! We saw a farm truck on Craigslist that we wanted to go look at. Its a truck that has a dump box on the back. We are anticipating putting up that garage and shop and intend to move in some dirt to build up the base for the foundations. Also, we have VERY rocky ground and anticipate moving rock from time to time as well. The truck is about 40 years old and my biggest fear was would it make it over the mountains to get home! It did, thank goodness, though it took a while!
Its amazing how there really are alot of nice folks around here. The folks selling this truck were very kind and we wound up being over there quite a while while they talked, took it for a test drive, put a new battery in it, talked a little more. They even made us all lunch and send us home with a huge box of large zucchini and yellow squash. Our oldest son was in awe because he had alot in common with the guy selling it. He is an ice road trucker in alaska- something Taylor would really like to do. It made for very interesting conversation. He also flys helicopters and has an earth moving business. Supper nice folks and a day well spent.

You can also shred it up and then just freeze it until you are ready to eat it. We like it in stir fry, fritatas, soup, and veggie quesadillas.
I have been meaning to tell you that our kitty that died was named Moo also... sweetest kitty in the whole world :) We are all happy to hear that you have a kitty named Moo now too!

ReplyDeleteI have a yummy and simple zuke casserole recipe, though it may be too late for you to enjoy this year...
Ingredients:
1 large zucchini, sliced thinly with rind removed
1 can tomatoes, chopped
1 onion, diced
Flavored bread crumbs (Italian-style work well)
butter
salt and pepper
garlic powder
Italian seasoning
cheddar cheese
Grease sides of 9 x 12 cooking pan. Layer zucchini in bottom, sprinkle tomatoes, juice from tomatoes and onions on top. Shake spices and cheese on top, repeat layers. Dab top with small pats of butter (12 is plenty) and sprinkle cheddar over all. Cover with foil and cook at 375 for 15 minutes. Turn heat down to 350 and cook for another 30 minutes. Hope you enjoy--it's one of my favorites!
